Features
The nose has much less impact than the wood since it is vinified in a 33 hl Vinooxygen tank, therefore it plays a lot on the balsamic notes and the fresh fruit that returns beautifully vivid on the retro-nasal after the sip. In the mouth, it is intact in its essence of pinot noir, with a good structure, also given by the very warm 2017 vintage, but with great balance.

Made from 100% Pinot Noir estate grapes
Exhibition:
West, Southeast, East
Volume:
14.00%
Operating temperature:
16-18°C
Travel in quintals:
50 per hectare
Vineyards:
"La Vela" e "Mongardin"

Vinification
Vinified after maceration in a horizontal fermenter. It is racked directly into the Vinoxygen tank.
Pairings
One of the joys of Pinot Noir is its versatility in pairing with a wide range of dishes, from simple appetizers to rich salads, pasta dishes, and fish like smoked salmon; it is also suitable for more complex and structured dishes with white meats, such as pork loin or chicken cacciatora with roasted vegetables, or with red meats, like veal steaks or venison.
