Vinification

Crushing, destemming and gentle pressing, fermentation in stainless steel at controlled temperature before bottling for sparkling. It is then aged on the lees for 48/60 months before disgorging.

Pairings

It is an extremely gastronomic wine. Perfect as an aperitif, it pairs pleasantly with first courses, grilled dishes, and raw fish, or alternatively, to stay in the Piedmontese tradition, it can be paired with dishes featuring white truffle or a nice mixed fry.
