Vinification
Crushing, destemming, and soft pressing. Following flotation, the must is transferred to the Vinooxygen fermenter, which allows all phases to be carried out without ever transferring the wine until bottling, in order to preserve all the aromas and minimize the use of sulfites.
Pairings
Our Riesling pairs wonderfully with fish and shellfish dishes, with first courses featuring white truffle, with second courses of white meats and poultry, or it can simply be enjoyed as an aperitif.
