Features
Freshness and taste minerality accompanied by an intense bouquet of white flowers and exotic fruit fully express the characteristics of the Sauvignon blanc grape. This is the highest vineyard in the company, cultivated at 540m above sea level, which is characterized by strong temperature fluctuations in August and September. In the Sauvignon blanc grape, it is very important to achieve optimal ripening both technologically and aromatically. The delicacy of the aromas and the taste balance can easily be compromised in the case of an early harvest or a harvest that is too late. This meticulous care of the vineyard indeed determines the pale yellow color, clear and bright, the nose that opens with marked hints of white flowers and the characteristic aromatic profile typical of Sauvignon blanc, reminiscent of Boxwood flowers, followed by notes of exotic fruit, primarily pineapple and lychee. On the palate, it is fresh, mineral, and savory, as is proper for a high-hill wine that comes from poor, calcareous soils, with good structure and persistence.

West, Southwest, South
Volume:
13.5%
Operating temperature:
16-18°C

Vinification
Crushing, destemming, and gentle pressing. Following flotation, the must is transferred to the Vinooxygen® vinifier, which allows all phases to be carried out without ever having to rack the wine until bottling, in order to preserve all its aromas and minimize the use of sulfites.
Pairings
Excellent simply as an appetizer accompanying typically savory preparations or for a fish-based meal. Delicious also with first courses of light sauces and vegetables or with white meat fried dishes.
